What you’ll need:
- Small head of radicchio or endive lettuce
- Radishes, sliced thinly or diced (watermelon radish if available)
- Pea shoot or microgreens
- Dijon vinaigrette
- 1 can of tinned fish
How to prepare
- Tear individual lettuce cups from head. Arrange on platter.
- Slice or dice radishes to preference.
- Combine with microgreens.
- Toss with vinaigrette or oil drizzle straight from can. (Option to add dijon to sunflower oil and use this way).
- Place mixture into lettuce cup, and top with tinned fish.
