What you’ll need:

  • Small head of radicchio or endive lettuce
  • Radishes, sliced thinly or diced (watermelon radish if available)
  • Pea shoot or microgreens
  • Dijon vinaigrette 
  • 1 can of tinned fish

How to prepare

  1. Tear individual lettuce cups from head. Arrange on platter.
  2. Slice or dice radishes to preference.
  3. Combine with microgreens.
  4. Toss with vinaigrette or oil drizzle straight from can. (Option to add dijon to sunflower oil and use this way).
  5. Place mixture into lettuce cup, and top with tinned fish.
